Eat as Madrid does: standing up, in instalments. A caña of beer arrives with a free tapa in many bars; bocadillos de calamares (fried squid rolls) are the ritual beside Plaza Mayor; and cocido madrileño, the chickpea and meat stew served in stages, is winter's great institution. End the night, or start the morning, with churros dipped in thick hot chocolate at a chocolatería.

What Madrid feels like

Madrid keeps peculiar hours and makes no apology for it. Mid-afternoon the streets slacken, then revive for the paseo, when whole families walk simply to walk. Sundays mean the El Rastro flea market and crowded vermouth bars in La Latina. Under it all runs castizo pride (the old-Madrid identity of zarzuela, chotis and neighbourhood fiestas) softened by the fact that most madrileños' families arrived from somewhere else.

Getting across the city

The Metro de Madrid is one of Europe's largest networks and reaches almost everywhere a visitor goes; load journeys onto the rechargeable Tarjeta Multi card, which also covers city buses. Cercanías commuter trains connect Atocha and Chamartín stations to towns across the region. The centre itself, from Sol to the Prado, is comfortably walkable, and night buses (the búhos) take over once the Metro closes. Adolfo Suárez Madrid–Barajas Airport connects to the city by Metro Line 8, by Cercanías line C-1 from Terminal 4, and by a round-the-clock express bus to Atocha.
