Why visit Ibiza

Ibiza holds far more registers than its reputation admits. Dalt Vila's Renaissance walls and cathedral earned UNESCO listing; the Ses Salines flats have produced salt since Phoenician times; and the offshore rock of Es Vedrà supplies one of the Mediterranean's most theatrical sunsets. The clubs remain a global phenomenon between May and October, but the island's north (around Sant Joan and Benirràs) stays rural and slow, all pine forest, drum-circle sunsets and family farms. Between those extremes lie the calas: small, clear-watered coves that repay unhurried exploring.

What Ibiza feels like

In summer the port districts run on a nocturnal clock (dinner at eleven, clubs until dawn) while ten kilometres inland, villages barely register the season beyond fuller café terraces. White churches, terracotta earth and pine green set the island's palette. Off-season Ibiza is another place again: mild, quiet, favoured by walkers and cyclists, with locals reclaiming the beaches.

Ibizan cooking is Balearic country food with a fishing fleet attached. Bullit de peix (fish stewed with saffron potatoes, its broth returning as a second course of rice) is the signature; sofrit pagès brings lamb, chicken and sobrassada together in one farmhouse dish. Finish with flaó, the mint-scented cheesecake, and a glass of hierbas ibicencas.

Coves, buses and boats

Public buses radiate from Ibiza Town and Sant Antoni, and beach services multiply in summer; there is no rail. The classic move is a small hire car or scooter, since the best calas hide at the end of unnumbered lanes. Ferries shuttle constantly between the port and Formentera, and water taxis serve some beaches in season. Ibiza Airport lies about seven kilometres south-west of Ibiza Town, close to the Ses Salines flats. Buses and taxis make it one of the Mediterranean's quicker airport transfers.
